A voice assistant listens locally for its wake word and, once triggered, sends the following audio request to the cloud to be processed - and historically many platforms retained those clips and transcripts to improve their services. The good news is that the major platforms now offer controls: you can review and delete your voice history, turn off human review of recordings, and in some cases stop clips being saved at all.
